From breakfast through to dinner, have you ever wondered what a vegan eats on a typical day?
Well this is my second ‘what I eat in a day’ post in the series because it was so fun to share and write about the first time. You can view that post here- What I Eat in a Day! #1.
In this post you will get to see an insight into how a vegan eats on a typical day in the life, while making sure to get all the required nutrients and to simply enjoy food. Which is something I struggled with because switching to veganism; you can read more about that on my Why I am a vegan page or my 2016 Recap | 2017 Resolution post.
There are a few different kinds of diets people in veganism follow such as; raw, gluten free (GF), High Carb Low Fat (HCLF) etc. For me I follow a HCLF diet eating wholefoods and eating as much as I want (if I’m hungry I will eat a lot) I don’t believe we need to restrict what we eat, it causes a lot of problems, from personal experience we got to learn to enjoy food.
Rise and Shine Sleepy!
When I wake up, I drink some water probably 500ml infused with fruits (today I had strawberry water) YUM! You probably wonder why I do this? After sleeping for 8 hours your body needs a wake up alarm; this is what the water does and helps to refresh you for day ahead.
I then meditate for 20-30 minutes to prepare for the new day ahead; giving yourself some time to clear your mind and saying a few positive affirmations, such as “I will have a stress free day” etc. doing this every day will help you feel more mindful and less stressed.
Meditation has a lot of great mental health benefits; I was glad I started. Have you got a stressful life? Are you always rushing through life not enjoying the journey? then I challenge you too try meditating for 5-10 minutes every day (there are so many YouTube channels offering meditations for beginners) I guarantee you will fall in love with it.
Breakfast Time!
Ok so by this time after my meditation I am getting a little hungry; so I go mix my daily detox juice (it is usually just apple cider vinegar, turmeric, lemon and hot water) before eating.
But today I decided to add these to my green juice which I created yesterday it was simply kale celery and apple, then I just added the vinegar lemon and turmeric. The taste is a little strong but it does wonders for your body; it flushes out all the nasty toxins that gathers from a range of different things such as alcohol and caffeine etc.
Downing this creation while trying to cook my breakfast is always a fun task. Today I was feeling like oatmeal for my brekkie; so I made my cinnamon and ginger oatmeal with incredible toppings. My favourite part is toppings! 😛 Peaches, Blackberries, chia seeds, flax seeds and homemade strawberry sauce. How yummy does this look?!
This meal is so filling and nutritional its such a super way to start your day lots of energy and fuel to keep going through to lunch. I honestly plan everything around food now, it is a healthy addiction; definitely something I did not think I would have said a year ago. Its wonderful how much a year can change a person, of course for the better.
Lunch!
After breakfast I spent some time with my mammy; we watched a couple of Chicago Fire episodes drinking some green tea, then it was time lunch! I had some chickpea celery curry left over from yesterday (check out my recipe here: chickpea and celery curry recipe) I reheated some of it while cooking potato chunks in turmeric (yes I have a slight obsession with this spice) heated some frozen peas and a Linda McCartney vegetarian sausage topped with pumpkin seeds, sunflower seeds, pine kernels sesame seeds, chia seeds and Yeast flakes.
I love to add a lot of different seeds to my food for an increase in the nutritional value of that meal and because they just taste awesome. However as a once obsessed meat-eater I would have never ate seeds I probably would have thought “Wait since when did we become a bird?” I guess this is what you are thinking right now am I right? Read up on the benefits I am sure you’ll start to incorporate them into your diet.
Dinner!
After lunch I had a driving lesson; which went well. Hopefully won’t take me too long to pass the test. Yes I know driving is not environmentally sustainable but a skill that is handy to have; living out in the countryside it is difficult to get places so I had decided to take lessons before starting university in September, I’m not planning on getting a car any time soon though.
Ok so for dinner I just wanted something simple and quick to make; I decided on a bowl of some veggies with a lot of seeds on the top and boiled rice in turmeric. I ate dinner while watching some YouTube videos (ThatcherJoe and Caspar Lee channels)
Look how colourful this bowl is! It’s like eating the rainbow; not the Skittles sorry!
Snack Attack!
It’s now 10pm, I’m writing this post sharing with you my marvellous food from the day; It is making me get hungry looking at the photos of my food.
So it is time to indulge into some Alpro soy yoghurt.
If you haven’t tried this dark chocolate yoghurt you have not lived! It is beyond delicious so much better than normal dairy yoghurt creamy and chocolaty. Try it! I bet you will fall in love with it. Your dinner looks so tasty! I’m learning to drive at the moment too, i pretty much live in the countryside too so i know how much of a pain it is to not be able to get anywhere. x
